Downtown cafe open for business

I wrote a short item about Elaine's Cafe and Market, a new business in downtown Bakersfield, catty-corner from Happy Jack's. It specializes in vegetarian and vegan fare. Proprietors Tim and Tracy Thompson want to share their love of healthful food with the community. They sell sandwiches, salads and dry and cold and frozen goods. Hot foods will be available before too long. I tried the vegan chicken salad sandwich for lunch today. It's made with vegan mayo, soy "chicken" and featured lettuce, tomatoes and red onions. It's a good-sized sandwich for $4. Tracy makes all the food, including the ice cream, which is refreshing and light. Elaine's is open from 7 a.m. to 7 p.m., Mondays-Thursdays; 7 a.m. to 2 p.m., Fridays; and 11 a.m. to 3 p.m., Sundays. — Jenny Shearer, staff writer 0 comments from 0 users
