Champs...needs to take some lessons from the Pit Master's of BBQ in the Midwest and the South. I'am not saying that Champs is not good...but it does not come close to what real Championship BBQ...
Champs...needs to take some lessons from the Pit Master's of BBQ in the Midwest and the South. I'am not saying that Champs is not good...but it does not come close to what real Championship BBQ is.
They have a great smoker...it should produce outstanding BBQ. Why doesn't it? It produces good barbecue. But not outstanding BBQ. Maybe sometime spent with the Pit Master's back East might help. Don't get me wrong, I will come back again and give it another shot. I wish them the best...I really would like to see great BBQ in Bakersfield...but unfortunately it is found in most peoples own backyards. Champs BBQ could be the best in town, as many people think, if they would just tweak somethings in their preparation.
They have great people who run and own the place, and good service. But great BBQ has to be included in the equation also.
Champs Update: I visited Champs last week. I found the food much better this time around. I order the Pork Ribs. They were smoked just right. The people who took my order were very kind and friendly. I am looking forward to my next visit. I will be trying the Beef Ribs.

We wasted money going to champs people were saying how good it is i guest it is if thats the only q they ever had food was not good at all i will never go back just because it says bbq doesn't...

I used to love Champs. I used to go there 3 or more times per week when they were at the other end of their building. I remember buying a pulled pork sandwich with a side dish and cornbread for a moderate price. I stopped going when the price went up several dollars for the sandwich without the side dish or cornbread. Within a few years the price doubled to get the same meal, and each item was charged for seperately.
The food is good, don't get me wrong. But it is now priced so outrageously high that it's not worth it. The wait to get it is also ridiculous. You used to stand in line and the food was dished out in front of you, then you paid and left. Now you order and have to wait (with the other 20 people in an area not suitable for more than 4 people) for your small sandwich to be assembled in the back and brought up to you. So now you pay twice as much and wait twice as long. No thanks.
The only reason they get as much business as they do is because of the limited lunchtime dining choices in the area.
