Fall Weather and Cozy Cooking
It's raining FINALLY and now I can't wait to go in the kitchen and make all kinds of cozy recipes. I made a pot of navy beans yesterday, and the whole house was steamy and cozy because of it. I'm making pork chops and dressing tonight, and I bought a corned beef (on sale for a good price at Vons) and cabbage for Friday. All nice, cozy meals for cool weather, and all hot miseries in summer. So--got anything cozy cooking? (Oh yeah--and I'm making chocolate chip cookies today. Yay!) 55 comments from 17 users

Mmmmm Cozy winter eating. Beef stew, pinto beans, tamale pie, pork roast, lots of potatoes, biscuits and gravy, chili beans, persimmon cookies, vanilla cake with hot fudge sauce, peach cobbler. Heck I just gained 5 pounds listing that stuff. posted by

There's a soup I'm going to bring over so you can try it some time. It's called "Tomato Basil" from Vons--sounds simple, but it's the most complex, yummiest, most wonderful tomato soup in the world. You'll never go back to regular tomato soup again. And the sweet potatoes with butter and brown sugar (and marshmallows!) is my favorite part of Thanksgiving. Good thing I just ate lunch or I'd be raiding the fridge right now. posted by

Paula Deen says about sweet potatoes "if you don't have oven space for a sweet potato casserole at Thanksgiving just toss a few sweet potatoes in the back of the oven and let them roast. When they're done, split them open and slather with cinnamon, honey butter". Yumm posted by

i have an EASY & amazing recipe for Chicken Enchilada Quiche, i love to make in the fall/winter (since it has to bake for so long) i am gonna make that this weekend. last night my hubby made a simple dinner of soup & grilled cheese sandwiches, tasted so good. posted by

When I grow up I wanna be Paula Deen and Martha Stewart. Or at least one of them. Hell, if I ate everything they make, I'd be BOTH of them. I have a minestrone recipe that is simply terrific, and served w/ garlic bread, it is heavenly. Schwan's has a tomato-basil soup that is really yummy; I ordered it for lunch at work today. posted by

Share your chicken enchilada receipe goldilox and CB have you tried the "Tomato Basil" soup by Progresso. The absolute best canned soup I have tasted. I love the Vons soup as well but if you haven't tried the Progresso, you should. posted by

I haven't tried the Progresso version, sellsnew, but I'll get it. The Vons kind has to be refrigerated, but Progresso will be good to keep around in the pantry for when I need my tomato-basil soup fix. ghost--I still haven't tried the Schwan's one yet! posted by

Polenta and chicken cacciatore .... polenta:something so simple as cornmeal,butter,sauteed onions,chicken broth and fresh Parmesan...but more addictive than heroin.

I forget not all of you are food obsessed like me...it is slowly cooked,stirred the whole time, in a saucepan on a low boil for about 20 minutes. Or you can cheat and buy it pre-made in a roll ( deli section ), or let the microwave do the cooking for you. The sitting and stirring is a pain ,but the results are heavenly.

Here it goes.... 6 boneless-skinless-chicken breast halves Canola oil 1 (1ounce) packet onion soup mix 1 (6 ounce) can frozen orange juice concentrate,thawed Brown chicken breasts in little oil in skillet and place in sprayed,large crock pot Combine onion soup mix-orange juice concentrate and 1/2 cup water in bowl and pour over chicken Cover and cook on LOW for 3 to 5 hours---serves 6 I love this book because it doesn't break the bank--try that over some white rice someday.... posted by

I did my favorite pork chop recipe a few nights ago. Pork chops w/ spiced apples. My hubby loved it...he ate three chops! Served it with a vegetable couscous...yummy! posted by

I have a chuck roast in the crock pot as we speak. Meat, topped with a packet of Lipton Onion Soup, some of that Worschetawhatever sauce, garlic, salt & pepper. I change it up sometimes. Today I just used barbeque sauce, onion, garlic and some peppercorn meat marinade. Shreds easily when done for sandwiches or burritos. Yum... posted by

We had chili two nights ago and chicken pot pie last night. My mom combined two chili recipes and just threw a bunch of stuff together. For some reason one of them called for cinnamon, so that's what she threw in there. "Am I crazy, or do I smell cinnamon in my chili?" I could taste it, too, but it wasn't gross or anything. Just different. She also used beer in it. Ugh. I think I'm getting sick and my head hurts, so I'm getting off the computer. Please excuse any silly typos, because I just don't feel well enough to reread what I've written. posted by

Man, you guys are so much more adventurous in your cooking than I am. I've HEARD of polenta, but I've never had the nerve to actually cook it. And pork chops with apples sounds awesome, but I've never tried that. I just always make pork chops the same two ways, over and over. Once again--I need to BRANCH OUT! Cat...you should try that pork chop with spiced apple recipe. I will get it for you this weekend. It looks and tastes fancy but is so easy to do! Guaranteed to impress. I have a few that you might like to try, actually. I have tried cinnamon in chili. Emeril's recipe uses it. You are right, it is different. posted by

My hubby made a pie (yes, really) over the weekend and it was really yummy and so easy. Cool whip, frozen berries and apple jelly, melted. Mix together and pour into a premade crumb crust; chill. That's it, and my son just loves it. This is lowfat too. posted by

I hate to admit it, Ling, but I am not even sure what chicken mole is. I'm not kidding. ghost--I saw a recipe in my mom's magazine yesterday that looked soooo easy, and I forgot to write it down. It was a pumpkin/pecan pie--no-bake. Dang it! I'm going to have to remember to get it when I go back over there. I think I'll make your pie with frozen blueberries, since they are they kids' favorite. How much apple jelly and cool whip did he use? posted by

He used a whole standard-size bowl of CoolWhip and half a small jar of apple-cinnamon jelly. The cinnamon added a nice spice to it. He used mixed berries, but blueberries would be yummy; just add as much as you like. He heard this one from one of his customers, and my son loved it so much that he sat and ate half the pie! posted by
