Why doesn't Joseph's move to a larger location?

I, my friends & family love Joseph's for dinner, however it's very small and is crowded on week-ends. The wait staff barely has room to move around tables. why doesn't Joseph's move to a larger place? I'm sure there are many locations available in Bakersfield. Same goes for Rosa's.
— B. Harrison

We spoke to Luis Ortiz, the owner of Joseph’s on F Street downtown, and he told us it’s not always busy, just on Fridays and Saturdays.
“That’s the way it is,” Ortiz said. “I’m not interested in moving.”

I applaud Joseph's and Rosa's, they remain in the neighborhood and cater to the customers who made them what they are today. You see too many fine establishments selling out to move to Rosedale, leaving behind their regular customers. If a restaurant has good food and service, it's worth the wait.

I am glad they both are staying put~ these two small family resturants are worth the wait.

It wouldn't be the same to me.... just like if Luis stops wearing his 1980s parachute "happy pants".... just wouldn't be the same... there is not alot of space to wait there either... but isn't the wait worth it ?   I think it is !!
